Life Is Too Short G-Free Pancakes.

Life is tough. And like Forest Gump's mama says, it's also like a box of chocolates. You never do know what you're gonna get. Celiac included.

The older I become each year + the more experiences I go through, the more I realize how that simple statement rings true. And the more I come to find how insightful and wise Mama's are (even the ones who are created by a screen writer). I sure hope that's the way my girl will grow up seeing me - wise + full of the answers she seeks. :)

For some of you who are newly diagnosed with celiac disease, this may be your "tough" patch that life has thrown you. You may be feeling overwhelmed, you may be feeling bitter...and well, you may even be starving because you're thinking to yourself - I don't know what I CAN eat!.

(Gosh, I hated that feeling in the beginning! And I assure you that I can relate.)

For others, you may be farther along in this journey (like myself) + other "tough" life situations may have taken precadence over your gluten intolerance woes. You may be going through a challenging time at your job, with your spouse or family, feeling financially stretched in this economy, or feeling like you're at a cross roads in your life + you need to make a change.

Whatever your tough situation may be, I can tell you this much: Pancakes make everything better.

Especially the BIG, yummy, Gluten Free ones with chocolate chips in them, drowning in maple syrup.

The best part?
These babies are fail proof. And they don't taste any different than the wheat-filled ones you used to make. They are AMAZING!

Throw some chocolate chips, blueberries, or your favorite fruit into the batter + I'd say you'll soon be forgetting all about those tough life scenarios that are getting you down. At least temporarily...until it's time to make another batch! ;)

Maybe, just maybe -- they'll even flip that frown upside down + help you remember that life is too short to let anything get the best of you, no matter how challenging it is or how hard it may seem. This too shall pass and you will survive + conquer whatever card(s) life deals you. And then yell, "nanny nanny poo poo!" in it's face when you do!

Am I right? (Or am I the only one doing this? Ha!)

And if you need the extra umph! to get you over that slump you're in -- my advice is always to listen to music + I highly suggest Pink's newest songs, "One Last Kiss". Just just fill in choice words with celiac or whatever is bothering you when appropriate.

And sing the verse where it says, "we've had a sh-t day" nice and loud + dance around in your living room. Even on repeat, until you feel better. :)

All is well here, if you're wondering. I just happen to know the lyrics to pretty much every song out there...and I happen to think it's a great outlet for getting your frustrations out. It even says, "Life's too short for this" in the song. Are you impressed? :)


Moving along...
To make yourself some Gluten Free 'Life Is Too Short' (So-Eat-What-You-Want) Pancakes - just simply grab a medium sized bowl + follow my lead.

If you can remember the number 1, you're already ahead of the game because coincidentally every measurement in this recipe begins with it. :)

Give it a good mix + toss in your favorite add-ins. Pour your favorite G-Free syrup on top (just go for the el-natural, organic brands and you're safe!). My all time fave add-in is chocolate chips. Yumm!
