Gluten Free Banana Walnut Muffins

Happy Labor Day Everyone!

There's nothing I love more about a holiday, than another reason to spend more time with my family + friends. This also translates to another reason to cook + bake up some delicious Gluten Free recipes to WOW everyone which you know I give no objection. ;)

Today's recipe comes with a picture of the full Labor Day spread that I prepared for this afternoon's festivities, as well as a recipe for my favorite Gluten Free Banana Walnut Muffins!

Want to know all it takes to make this recipe? 
This Gluten Free Muffin Mix by King Arthurs Flour, 3 eggs, 6 tablespoons of melted butter, 2 extra ripe bananas (mashed), 3/4 cup of milk (I used 2% though soy or almond would work well too) + 1 cup of chopped walnuts.

Bluntly put -- if you can read directions on a box, you can make these. The King Arthur's box says that you can use any add-ins that you'd like. Well, these are the ones I like and these are the ones I choose often! This combination is one of my favorites despite, yes, not liking bananas.

Aren't I funny? ;) It's the only thing with bananas that I will eat. I bet it's because I like sugar even more!

Once placed into the oven they'll look like this:

And 20 minutes or so later...lovely like this!

Voila! I told you it was easy. :)


Oh yes -- I almost forgot! I promised a Labor Day spread photo too.


You're looking at Jon's Famous Mexican Rice (to be shared this week!), my GF Grown-Up Baked Mac + Cheese, GF Smothered BBQ Chicken (as seen in this recipe, only all chopped up), and the GF Banana Walnut Muffins I'm sharing with you today.

I also made this creamed corn again. It just didn't fit on my plate during "round one" of the eating showdown. (LOL)

It was a huge hit + as you can tell -- all recipes I've shared, I already make again and again. There's a reason for this folks. :)
