Gluten Free On The Fly Egg Cups

Today's recipe is another easy one to create. And most of the time, I think you'll find that you already have all of these ingredients stocked up in your fridge.

If you've got a muffin tin, you're good to go! 

If you want to switch up this recipe in the future -- you can try making these with turkey, pastrami, or any of your other favorite G-Free deli meats. Most of time, we go with Boar's Heads Brand ham. It's super tasty and all of their products are Gluten Free! I use Hormel Natural Choice Meats as well. 

Ready for a delicious, on the go treat? Well, then let's get started!  

Gluten Free "On The Fly" Egg Cups


I'm going to take you through this one step by step. 

Step 1: Get out your trusty muffin pan! 

Step 2: Layer the bottom of each muffin cup with some deli meat. I tend to use 2 slices and criss-cross them over top of one other to cover the entire muffin cup space. I find that they don't fall apart easily this way and are easier to hold.

Step 3: Add salsa on top of the deli meat. 

Step 4: Crack an egg into each muffin cup. 

Step 5: Add a pinch of salt + pepper to the top of each egg cup you've created. 

Step 6: Top the "egg cups" with about a tablespoon of your shredded cheese of choice. You name the type of cheese, I've used it. Mexican blend, cheddar, parmesan, mozzarella...

Step 6: Bake + keep an eye on them!

Step 7: Enjoy + relish in your accomplishment, that virtually took you NO TIME at all! 

Step 8: Watch your family enjoy it! Or if you're solo -- enjoy the fact that you don't have to share these bad boys with anyone else! ;) They're so good, you won't want to share!
