Holy Guacamole!

One of my favorite things to make with avocados is a batch of guacamole! It's simple to throw together, it's delicious, and it requires few ingredients -- all of which are already Gluten Free. :) 

On average, I whip up a batch of this at least twice a week, especially this time of year during avocado season. 

I live in Southern California, and here where I live, avocados are grown by the bunches. We even have an avocado grove just down the road from our house, about a mile away, where we can see crows stealing avocados and cracking them open along the side of the road.

I'm not kidding.

How do you make guacamole? 
It's pretty simple. All you need are a few avocados, some tomatoes, an onion, fresh cilantro, salt, and a squeeze of lemon or lime juice (optional). My hubby even likes to add in a little bit of minced garlic. :)

To start, go grab your avocados. I use 3-4 because I prefer to make a big batch so I can use it with some other dishes as well. Pair this healthy + tasty treat with some chips + salsa or on top of tacos or your favorite burger. It's so delicious! :)

Now, cut your avocados in half and pop out the seed with a spoon. Then start scoring each half avocado with a knife like this:

Once scored, squeeze the insides of the avocados into a bowl. Discard the dark peel.

Now you'll want to dice up one tomato, 1/2 onion + 2 tablespoons of cilantro. Add them to the bowl.

Not feeling like dicing up some onions, tomatoes + cilantro? 
Well then you're going to love this next tip! There is something that you can get in the produce section near the pre-packed salads. It's called "Pico de Gallo".

Here's what it looks like (a 7 oz. package):

Once all the ingredients are added into the bowl, you'll want to begin smashing + mixing it all together with a fork.

All you have left to do is add in 1/2 teaspoon of salt + you're good to go!

  1. How is it that I didn't know how to properly cut an avocado until now? Thanks for the tip!!

    I'm thinking more and more about incorporating more gluten free recipes in our diet, but my hubs seems apprehensive and unwilling. He doesn't mind the idea of eating GF between the two of us at home, but "what about when we have guests over? what about when guests want to bring food over? what about when we go out to eat?" (we have friends over for lunch every Sunday and it's potluck style.) Maybe I'll start doing some of these and slowly start making a switch... even if we don't go completely GF, I'm sure even a little bit of an intentional change will be good for us!
