Gluten Free Tomato, Feta + Olive Pasta Salad

One of the things I missed the most when I first went Gluten Free, was pasta. I used to joke before I had to change my lifestyle + diet to the Gluten Free one I have now, that I was on an all-carb diet. I couldn't get enough of them carbs!

And since finding the perfect brand of Gluten Free rice pastas...guess what I'm eating all the time again?

Yep, you guessed it! Pasta.

Even though I'm not Italian, I swear that it must lie somewhere in my bloodline. Point and case -- this recipe I made this week. Another pasta dish! :)

Tinkyada Rice Pasta is by far the best Gluten Free pasta that I've ever tasted. And I've tasted a lot of different kinds. Most 'gluten eaters' (like that name I gave them? Ha!) that I've served this pasta brand to, can't tell the difference. I usually get the response of "No way!" when I tell them that they are in fact eating something Gluten Free.

Yes, way! And it's delicious! There's no other pasta that I cook with.

Tinkyada Rice Pasta comes in a wide variety of shapes and sizes from Lasagne noodles, to spirals, to penne noodles, and more. Do I sound like a walking advertisement? Ok, maybe I do. I suppose it's because I like this pasta that much!

Believe it or not, our local Ralph's store even carries it. Speak to the Manager at your local grocery store and start making requests! That's how Tinkyada Rice Pasta and other Gluten Free brands started showing up on the shelves by me.

Going with the carbs-happy theme, I decided today to make a Tomato, Feta + Olive Pasta Salad. It's perfect to serve for dinner, at your neighborhood BBQ, or as a side dish with your favorite italian meal.'

And guess what else? It's easy + simple to make! Just the way I like it. :)
